Blueberry Lemon Smoothie

Sweet and tart flavors pair perfectly with vanilla and coconut aroma in this antioxidant-rich drink. Make it for breakfast or take it to work for lunch. It stores well in the fridge for up to a day but is tastiest when freshly blended.

  • 2 cups unsweetened coconut milk
  • ½ cup frozen blueberries
  • ½ tsp vanilla-extract, sugar free
  • 1 tbsp lemon juice


  • 1Combine all ingredients in a food blender.
  • 2Blend on high until smooth.
  • 3Serve immediately or store in the fridge.

Preparation Tips

You can boost the fiber content of this smoothie by adding chia seeds, flax meal, or a fiber powder. This will also result in a thicker smoothie. If you don’t have blueberries on hand, feel free to use other berries but keep in mind that this may result in a tarter-tasting smoothie.
