Keto Cauliflower Colcannon – Irish Side Dish Recipe

Colcannon is a great low carb dish, it’s buttery, delicious and a perfect accompaniment to our Corned Beef with Low Carb Mustard Sauce.

Our Colcannon recipe makes 4 generous servings. 1 serving has 3g net carbs.

Store any leftover Keto Colcannon in the fridge for up to 4 days. We don’t recommend freezing it.

Keto Cauliflower Colcannon Ingredients

  • 1 pound of Cauliflower, cut into florets
  • 5 ounces of Cabbage, finely shredded
  • 2 Scallions, thinly sliced
  • 2 tablespoons of Chives
  • 2.5 ounces of Butter
  • 1 teaspoon of Pepper
  • 1 teaspoon of Salt

How to make Keto Cauliflower Colcannon

  1. Cook the cauliflower in a pot of boiling water for 5 minutes, or until it is tender. Drain well and blend in a food processor with the salt and pepper.
  2. Melt half of the butter in a frying pan over medium heat, add the cabbage and saute for 3 minutes.
  3. Add the scallions and chives and saute for 2 minutes. Reduce the heat to low.
  4. Pour the mashed cauliflower into the pan and mix well. Adjust seasoning to taste.
  5. Serve Cauliflower Colcannon with the remaining butter melting over the top.

  • Serve Cauliflower Colcannon with the remaining butter melting over the top.
