5 Summer Salad Recipes and Bonus Cold Peach Drink!

Hot summer days sure put a dampener on our appetites for heavy foods, and many of us often choose to just grab a juicy fruit for lunch. However, sticking to plain fruit all the time can get kind of boring, therefore we gathered 5 light summer salad recipes that have fruits and loads of other good stuff to keep things interesting. As an added bonus we included a special peach lemonade recipe!

1. Peach and Apple Salad with a Maple-Dijon Vinaigrette

Summer fruits are a real celebration, with strong colors and intoxicating aromas creating delicious and special dishes that everyone will want to taste. This salad makes the most of everyone’s favorite fruits and kicks it up a notch with an amazing vinaigrette.

Total time: 5 minutes
Difficulty: Easy 

Dressing ingredients:

  • 2 tbsp. olive oil
  • 1 tbsp. apple cider vinegar
  • 1 tbsp. maple syrup
  • 1 ½ tsp. Dijon mustard
  • Salt – to taste
  • Pepper – to taste

Salad ingredients: 

  • 2 cups baby greens
  • ¼ cup dried cranberries
  • ¼ cup pecans (halved)
  • 2 tbsp. Feta cheese
  • ½ a green apple (granny smith, sliced thin)
  • ½ a peach (or nectarine, sliced thin)

How to make the dressing:

1. Put all the vinaigrette ingredients into a jar and close the jar well.

2. Shake the jar to mix the ingredients together and save for later.
How to make the salad:

1. Put the baby greens at the bottom of the bowl and layer the rest of the salad ingredients.

2. Mix the ingredients well, add dressing, and serve.

2. Watermelon Cucumber Salad

The following recipe combines fruits and vegetables, using the queen of summer fruit- watermelon, and tasty and refreshing cucumbers! The bold combination creates a crispy, salty-sweet and delicious salad.

Dressing ingredients:

  • ¼ teaspoon vinegar
  • ¼ cup lemon juice
  • 2 tbsp. lemon zest
  • 2 tbsp. oil
  • 1 tbsp. ginger (grated)
  • 2 cloves garlic (crushed)
  • ½ tsp. salt
  • ½ tsp. pepper

Salad ingredients:

  • 5 medium-sized cucumbers, sliced
  • 3 cups watermelon (cut into 2-3 cm cubes)
  • 3 cups cantaloupe (cut into 2-3 cm cubes)
  • 2 scallions, diced

How to make the dressing: 

1. Put all the dressing ingredients in a bowl and mix well.

2. Set aside until serving

3. Cucumber Mango Salad with Lime Dressing

If you want to start the day with a special meal that will satisfy you and keep you alert and focused, try the next mango salad. The cucumbers in this salad are known to balance body temperature, making them a perfect addition to any summer salad.

Salad ingredients:

  • 1 cup mango (peeled and cubed)
  •  1 ½ cups cucumber (cubed)
  • 1/3 cup red onion (roughly diced)
  • ¼ cup coriander (diced)
  • Lime juice from 1 lime (or lemon)
  • Pepper – to taste

How to make the salad:

1. Put all the ingredients in a bowl saving the lime juice for last.

2. Toss, making sure to coat all the ingredients with the juice.

4. Pineapple and Cucumber Salad with Sour Lemon Dressing

There’s just something about summer weather that has us thinking about beautiful tropical vacations abroad, and this salad will make the illusion of such a vacation so much stronger! 

Total time: 5 minutes
Difficulty: easy

Dressing ingredients:

  • Lemon zest from 2 lemons
  • Lemon juice from 2 lemons
  • Salt – to taste
  • Pepper – to taste

Salad ingredients:

  • 1 pineapple – peeled, and cubed (canned is okay too)
  • 1 medium-sized cucumber – cut into medium sized cubes
  • 1 cup coriander – roughly chopped

How to make the dressing:

1. Add lemon juice, zest, salt, and pepper to a bowl and mix well.

2. Set aside for later

2. Pour in dressing and toss until all the ingredients are well coated.

5. Sweet Potato Salad with Pesto-Avocado Dressing

The following recipe will become a favorite in your home because of the tasty and interesting combination of sour and sweet. The thin sweet potato strips along with avocado dressing will change your mind about combining ingredients on different ends of the flavor spectrum.

Total time15 minutes

Dressing ingredients:

  • ½ an avocado (peeled)
  • Lemon juice from one lemon
  • A handful of coriander
  • 2 tbsp. macadamia nuts (or walnuts)
  • ½ a red onion
  • 1 clove garlic
  • ¼ cup water
  • Salt – to taste
  • Pepper – to taste

Salad ingredients:

  • 2 tbsp. olive oil
  • Kernels from one corn cob (fresh)
  • 1 sweet potato (peels and sliced into thin strips)
  • 2 tbsp. water
  • 1 can of black beans (strained and washed) 
  • ½ a red onion (diced)
  • 2 cups of baby kale

How to make the dressing:

1. Put all the ingredients in a food processor and blend for a few minutes until all the ingredients are combined well.

2. Set aside in the refrigerator until ready to serve.

How to make the salad:

1. Heat a tbsp. of oil in a pan and roast the corn kernels until they become golden, set aside.

2. Heat the second tbsp. of oil in the same pan and lightly fry the sweet potato strips for about a minute.

3.  Add water and cook while mixing until the water evaporates and the strips become soft about 5-7 minutes.

4. Add all the ingredients in a bowl, pour in the dressing and toss until all the ingredients are well coated. 

Bonus Recipe! Raspberry Peach Lemonade:

On hot summer days our bodies beg for an ice cold drink to cool down, but water can get boring and carbonated drinks can feel too sweet at times and are certainly unhealthy. That’s why we’ve decided to add this special lemonade recipe that is sure to quench your thirst and cool you down!

Total time: 10 minutes:

Lemonade ingredients:

  • 4 peaches – (fresh, pitted and cubed)
  • 1 cup raspberries (fresh)
  • 1 ¼ cups water
  • ½ sugar (or sugar substitute)
  • 1 ¼ lemon juice (squeezed fresh from 4 lemons)
  • Peach slices for garnish (optional)
  • Raspberries for garnish (optional)
  • 7 cups water (cold)

How to make the lemonade:

1. Put peaches, raspberries and the ¼ cup water in a food processor and process until you get a consistent and runny puree.

2. Pour the puree through a sieve into a bowl, throw out the bits left in the sieve.

3. Make a simple syrup from ½ a cup of sugar and ½ a cup of water by boiling them together for 5 minutes or until the sugar is completely dissolved.

4. Pour 7 cups of water into a pitcher, add the puree, simple syrup, lemon juice and mix well.

5. Add the peach slices, fresh raspberries, and ice into the pitcher. Serve cold.
